Restaurant Composer – a symphony of tastes

Welcome to the Composer restaurant!

The restaurant is operated by the famed restaurateur Arkady Levin.

Composer restaurant promises many gastronomic discoveries to everyone who appreciates the Russian culinary and cultural traditions.

Chef Victor Osipenko has worked not only in Russia, but also in the restaurants of Switzerland and Germany. Being familiar with the national culinary history, he managed to recreate the forgotten tastes of the past centuries, bringing his personal touch and imagination to some of the ordinary Russian recipes.

For instance, the Russian salad recipe was subjected to major changes. Beef stroganoff appears in a quite unusual chef’s design: an improvised millefeuille of chopped veal and sandwiched onion confit is constructed in the middle of the plate. The true classics , such as Borsch, which is served with buckwheat, or a fish soup which is suggested with five northern fish and accompanied with vodka and a special Russian pie named rasstegai, have not been forgotten either.

Every single course – is a real hit. Take, for example, lamb ribs which are delivered with a sauce of sabrefish and a celeriac puree. You definitely will not find anything similar in the menu of any other restaurant. Among the absolute favorites – is a four-cornered kulebyaka. The cheeks of a sturgeon are put into one of the corners, sweet caviar with salmon – into the second one, whereas the third corner is filled with the rabbit kidneys with the sweet veal and the fourth – with white mushrooms and buckwheat. The course is served with sour cream and rich fish and meat bouillon. The portion is recommended for two persons.

The interior is designed in the style of Art Deco and it matches the gastronomic attractions of the restaurant. The parquet is laid in “herring-bone” style, crystal chandeliers and lamps made according to the drawings of the XIX century, huge panoramic windows with the views on the Kremlin and the Historical Museum – this setting seems perfect to enjoy the true Russian delicacies. You should also take a look at the active fireplace of the XVIII century – it was a real challenge for the founders to restore it within the old historical building.

Composer restaurant is equally good for both business lunches and romantic dates, family gatherings and tea parties, which are held in accordance to all the rules, with samovars and the freshest homemade pastry and cakes.
